Chris Joslyn

Executive Chef


Like all great Chefs, Chris had an amazing Mom who recognized his talent in the kitchen and encouraged him to see where it could take him. He enrolled into the Culinary Arts program at Bakersfield College and was immediately hooked. After attaining the degree, he set out to further his education at the California Culinary Academy - San Francisco. During school, he worked at the three-star Grand Café, then went on to extern at the famed four-star, La Folie, under French Master Chef Roland Passot. After spending two very influential years at La Folie, Chris continued his relationship with Roland, serving as Sous Chef at Left Bank Brasserie in its’ San Jose and Larkspur locations. Chris was then offered the Chef position at Left Bank - San Mateo. Most recently, he was the Chef at LB Steak, an American/French prime steakhouse. Chris had always wanted to end up on the Central Coast and jumped on the opportunity to make the move. In his off time he can be found in his home kitchen cooking for his wife Jessica, tending his garden, fishing or foraging for wild mushrooms. Chris is thrilled to be part of the dynamic team at the Los Olivos Wine Merchant & Café, and to play his role in serving up the flavors of the California Central Coast.

When Sam came home from interviewing Matthew Negrete, he confidently told his wife, “I think I found our new manager.” Sam appreciated Matthew’s sincerity and felt he would bring excitement and an extra level of professionalism to the Los Olivos Café. Matthew has been working in the restaurant business since he was a teenager. Alex BBQ in Shell Beach was Matthew’s first introduction to restaurant management. From there he felt privileged to assist in the development of Palazzo Giuseppe & Express in San Luis Obispo. Matthew continued working at Giuseppe as a manager until he was offered a position at Park Chalet Garden Restaurant in San Francisco. Then the Central Coast called Matthew back home. After marrying and settling down to be a father, Matthew began his search for a restaurant that encouraged genuine personality, served Good Food and Good Wine, and had a reputation that he would be proud to support. I think he found it.

I had absolutely no knowledge of the restaurant/wine industry when I started working at the Los Olivos Wine Merchant & Café in August of 2007.  Once I had a foot in the door, I quickly became fascinated by the local wine culture, the history and development of the wine making craft, and the many nuances between different varietals and local regions.  At the time, I had no idea how to pronounce the names of varietals like Sangiovese, or the differences between a Syrah and a Pinot Noir let alone the Rhone Valley and Burgundy, but I wanted to know.  After my shifts at the Café, I would stick around and taste through flights the wine merchant staff would put together for me.  I also started helping the owner at his Bernat Winery.  I started small; doing top offs, cleaning…a lot, and punch downs through harvest 2007.  Six years later, I am still working at Bernat Vineyards & Winery, but with far more experience and a concrete understanding in what Bernat is trying to accomplish.  Being a small production, I am involved in every process, and could not have asked for a more hands on experience.  Through studies with the Court of Master Sommeliers, tasting as much wine as possible, and talking with others in the local industry, I have continued my education, growth, and understanding in the industry I have dedicated the last six years to.  With an incredibly thorough understanding of local wines and wine culture and a strong foundation in international wines, I know I can help you find exactly what you are looking for.  Ultimately good food, good wine, friends and family, these are some of the best things in life; and what continues to drive my love for the job.  There are many great wines out there, but I’ve found that what truly makes a great wine is having the right wine for the right occasion.  I pride myself in being able to connect with our guests’, and find the perfect wine for whatever the occasion calls for.  Whether it’s for a dinner that evening, or a special gift for a friend, I know I can show you a wine you will love.

Cameron has an insatiable appetite for expanding and refining his wine expertise.  His passionate journey with wine began with a taste of a Santa Maria Pinot Noir. Like a spark, that sip ignited a life-long fire of curiosity about wine. It catapulted him into a new life. 

Even while working in the music industry, Cameron fueled the fires of his interest, as a wine buyer for Vendome Wine & Spirits. When Santa Barbara County vineyards called, he gleefully left all other pursuits behind and became a Cellar Rat at Tantara Winery, where he learned the art of blending. “At Tantara we tasted wines blind every day, experiencing great wines from around the world… this gave me a chance to taste some truly benchmark wines while further honing my palate,” Cameron remembers.

At Dierberg/Star Lane Winery, Cameron had the opportunity to delve into expanding his farming knowledge and was introduced to the benefits and efforts of the natural approach to wine making. 

Four years of the production side of wine making ignited the desire for Cameron to find a way to share his passion. At the Los Olivos Wine Merchant & Café, Cameron has found that platform from which he can share his expertise: “For me, there is nothing quite like being able to introduce someone to a wine that blows him away and opens the mind to new possibilities.” 

Still loving to learn and master his passion, Cameron accomplished the very rare feat of passing the Court of Master Sommeliers first THREE levels in just NINE months (each on his first attempt)! Now Cameron holds the title Advanced Sommelier. He is currently studying for his Master exam while he and his wife, Marlen (also in the wine industry) look forward to the debut of their own winery under the label, Amplify. 

-I can truly say that I’m living the dream of having a job that never feels like work, and I wake up every day excited about the prospects for growth and learning that surround me.
